An insulated bag for resting meat after the cook. Brisket comes off the smoker, goes in the blanket, and holds its heat and its juice for hours while everything else gets finished.
Resting is the step people skip. Pull a brisket at temperature, slice it straight away, and the juice runs out onto the board. Let it rest and the meat takes that juice back up. The problem has always been where to rest it, because a counter lets it go cold and a cooler is awkward to clean.
Multi-layer insulation with a heat reflective liner. The liner sends heat back into the meat rather than out through the shell, so what comes out hours later is still hot enough to serve.
Wide opening and a heavy zipper. A full brisket, a turkey, or a couple of pork shoulders go in without wrestling. It measures 21.25 inches long, 16 wide and 8 deep.
Canvas outside, closed cell foam, food safe reflective liner inside. The shell resists grease and the interior wipes down with warm soapy water. It folds flat, so it stores on a shelf instead of taking up the floor space a cooler does.
For resting, not cooking. This goes to work after the meat comes off. Do not put it in an oven, a grill or a smoker.
One thing worth doing: wrap the meat in butcher paper or foil before it goes in. It keeps the inside cleaner and makes no difference to the rest.
Buying it for someone else? If there is a griller or a smoker in your life, this is the thing they have not bought themselves. Anyone who cooks meat over fire knows resting matters, and almost nobody owns a proper place to do it. There is no size to get wrong, nothing to assemble, and nothing to explain past "rest the meat in this."
Worth knowing before you check out: Walden-made gear ships free at $50. This is $29.99 on its own, so a pair of Bonfire Boss™ Fire Gloves or a box of Sure-Fire™ Starters costs you less than paying to ship this by itself.
What goes with it
Bonfire Boss™ Fire Gloves are what you want on your hands while the cook is still going, for a hot grate or a cast iron pan. And if you are doing this over wood rather than gas, our stainless fire pit grill grate sits across an open fire.
